For those of you who only run into the pistachio on occasion at your local creamery, simply put, you're missing the boat. The pistachio has actually been proven to do some amazing things for your health.
Penny Kris-Etherton is a distinguished professor of nutrition at Penn State, and a pistachio researcher looking at the health benefits of this particular nut.
"In all of our studies and in the latest one with pistachios, we consistently find that nuts lower cholesterol levels and the elevated blood cholesterol level is a major risk factor for heart disease, so we see typically about a 10% reduction in the bad cholesterol and then compared with a diet that's low in fat, we see that the nut diets increase the good cholesterol
In research sponsored by the Western Pistachio Association, Dr. Penny Kris-Etherton has added to the already lengthy list of health values attributed to the pistachio.
